MANGO AND PINEAPPLE KABOBS LEMON THYME TO YOUR SORBET




For the kebabs:

500 gr. pineapple + 500 gr. Mango + 4 vanilla beans dry + 2 sprigs lemon thyme


For pineapple and mango sorbet :

250 gr. water + 60 gr. sugar + 1 egg white + 300 gr. pineapple + 150 gr. mango


1 - Cut pineapple and mango into small squares (2 * 2 cm .) . Make a hole in the center and insert the twig of dried, sprinkle with lemon thyme flower.

2 - For the sorbet: Boil water and sugar, add it to the pineapple and pre-cut mango. Increasing a tablespoon of lemon juice and egg white. Blend everything in the Thermomix and let cool.

3 - Crispy coconut : micro heat the sugar, spread on silicone brush and sprinkle top with coconut. Bake at 170 º C to take some color.

4 - Presentation: skip the skewers in clarified butter and sprinkle with sugar. Book on absorbent paper.

5 - submit superimposed on l quenelle of sorbet and a slice of mango. Garnish with the crisp.


6 - You can also insert cumquats (kumquats), which give a touch of acidity and citrus wedges.
